The olive, any olive, may be regarded as consisting of 3
main ingredients- oil (20%), water
(40%) and the olive body or flesh (40%).
It contains oxidation-resistant molecules, mostly called
polyphenols. These molecules are hydrophilic, which means that they are
attracted to the water in the oil. 2% only of these molecules are absorbed in
the oil and are responsible for its good anti-oxidation properties.
The remainder of these molecules is found in the olive
water.
Nature did not intend for large concentrations of
polyphenol molecules to enter the ground. When olives from one tree drop on the
ground, they do not cause environmental damage, but rather support the growth
and provide protection for this tree.However if we take all the olives that have dropped from an entire row
of trees and place them around a single tree, the damage to the tree and the
soil around it will be great.
The residual water in the oil production process is
actually a concentrate of polyphenols and other oxidation resistant molecules
and constitutes a major environmental problem.Unfortunately, in most cases the olive oil mills get rid of it, an
action resulting in polluting the environment. In Israel, the residual water,
(in the professional language – "Black Water") - is spilled into the
natural creaks and woods, polluting water sources and sterilizing the
landscape.In all the olive oil
manufacturing countries like Italy or Spain the same problem exists.
Despite its harmful potential in large quantities, we
thought that olive has unique beneficial qualities.To explore these directions, our lab
conducted a research on olive residues.Recently, has it become increasingly clear that, apart from oil, the
olive contains other materials that are potential contributors to health and to
the immune system if properly used, particularly if used in the right
proportions.
Many new and effective applications of olive residues were
developed by the Capernaum Vista's laboratories, such as the Olive Soap Scrub,
Olive Vinegar, Personal Hygiene Olive Water, general purpose Olive Water serving as soap agents for the home and
garden,(chemical free!) and organic controlled release fertilizers with unique
properties suitable for many agricultural crops.More products are yet under development.
All of the above mentioned products are patented by
Capernaum Vista farms Ltd or have "patent pending" status, worldwide.
The "Olive Soap Scrub" is the best known of the
products.
The Olive Soap Scrub" Is a paste contains 97% of
crushed olives, processed after extraction and separation of the olive
oil.The paste is based on a concentrate
of the remaining flesh/meat of the olives, the crushed olive pits and the
enzymes contained in them.These enzymes
are capable of oxidizing the oxidation-resistant molecules contained in the
olive residues. The technology of pitting the olive before the extraction of
the oil was developed in Capernaum Vista's lab, resulting on the one hand in a
high quality oil known as "Tabha", and a creamy paste on the other,
containing various size particles and the necessary enzymes.The olive pit mash is then added to the
residues remaining from other olive oil products manufactured on site, like
"Kursi" and "Beth Saida", all extra virgin, first cold
pressed.
The mixture of crushed olive pits, olive paste and other
olive residues is transferred to the next stage of fermentation and is mixed
with various plant essentials, vegetative nut oils and other natural
ingredients to make our wonderful soap paste, which also possesses natural high
disinfection capabilities.
Grade 1 - larger particles of crushed olive pits, serves
for scrubbing hard dirt, especially recommended for hands and body cleansing.

Grade 2 – smaller particles crushed olive pits, creating an
exfoliating (pealing) soap suitable for many uses, including facial skin.
